These muffins are chock full of apples, nuts and raisins, and is my all time favorite muffin recipe. I think it came from a Gourmet magazine about 12 years ago.

24 muffins (change servings and units)

Ingredients

Directions

    In a large bowl toss together the apples and the sugar.
  2. 2
    In a small bowl whisk together the eggs, the oil, and the vanilla.
  3. 3
    In a third bowl stir together well with a fork the flour, the baking soda, the cinnamon and salt.
  4. 4
    Stir the egg mixture into the apple mixture; add the flour andd stir the batter until just combined.
  5. 5
    Batter will be stiff.
  6. 6
    Stir in raisins and walnuts.
  7. 7
    Divide the batter between 16 greased muffin tins.
  8. 8
    Bake in a preheated 325 oven for 25-30 minutes.
  9. 9
    These are best eaten right from the oven, but you can enjoy them a day later too.

I followed the recipe with the following adjustments: no raisins, and pecans instead of walnuts. Mine came out a bit dry - I feel like they came out overcooked. They taste great though- and the smell while they are cooking is delightfully torturous.

    Wonderful. I didn't have raisins and walnuts, so I used 2 cups of almonds, prunes and apricots. Made exactly 16 delicious muffins

    Wow! These are awesome! I was looking for an apple recipe, but was too lazy to grate the apples lol, so this was perfect. It was the strangest batter I've seen for muffins since it looked all apple, but they turned out great. Made tiny adjustments for personal preference: used gala apples, 1/2c raisons, 1/2c walnuts and increased the cinnamon. Look forward to making these again! :o)

    Delicious! The name is very appropriate because they are very chunky. I used Gala apples instead of Granny Smith (because that's all I had) and I decreased the amount of sugar by about 1/2 cup. They're still plenty sweet and oh so yummy.
