My husband made the Cocoa Cumin Allspice rub last night and grilled up a couple steaks, and I would say it was a WONDERFUL rub. I disagree with the previous reviewer that the cumin overpowered the rub- I thought it went quite nicely with the amount of cocoa and everything else. We had never tried anything like that before, and really liked it. I would definately make it again and also try the other rubs. Thanks for posting!

We just got through trying Rub #4. It was superb. My DH said it was the best steak he had ever eaten. Will be trying the others soon. Thanks for the great tasting recipe.

Tonight we tried #2-cocoa cumin allspice rub. Good, but not great. I tried this one first because it sounded interesting (never tried cocoa on steak before). It didn't ruin a good steak or anything, but it wasn't incredible. The cumin was fairly overpowering (in fact you could barely taste anything else) and we ended up adding a lot more salt after the steaks were cooked. I'll try to salvage the leftover mix by adding more of everything except for the cumin. I'm still planning on trying the other mixes soon. Hopefully we'll like the others better. — Apr 11, 2006 update: I've added another star after trying #4- pepper coriander rub tonight. It had more of a kick than I was expecting and an almost jerky like flavor. I subbed white pepper for black as I was out. I think it effected the taste a little, but not in a bad way. We both liked this one better than #2.

I have made 4 of the Steak rubs. Have only used 2 of them so far. All 4 taste Yummy. Made steaks with #2- Cocoa Cumin Allspice rub. Delicious. Dh really liked the #3 Tarragon Mustard Seed rub when I made steaks with it. Am anxious to use the other 2, espically the #5 Star anise coffee rub. It really taste good. Had to get the star anise at the health food store. Thank you Chia for the nice varity of rubs for steaks as we do a lot of BBQ's.
