Cottage Cheese Enchiladas

Oh My!!! These enchiladas are too good to be true! I found this recipe on another recipe site and I just had to tell others about it! All of my guests love this dish. Just be careful, they're filling!

    Preheat oven to 350.
  2. 2
    To make meat mixture: Heat oil in medium saucepan, add either cooked shredded chicken or ground beef.
  3. 3
    (If using ground beef, cook until browned).
  4. 4
    Add onion and sautè and add taco seasoning and prepare according to package directions.
  5. 5
    To make cheese mixture: Combine sour cream, cottage cheese, salt, and pepper in a medium bowl.
  6. 6
    To assemble enchiladas: Take a bit of the meat mixture, cheese mixture, and shredded cheese and roll.
  7. 7
    Place the enchiladas in a 9x13 baking dish, with folded edge on bottom of pan.

    Top tortillas with any remaining meat or cheese mixture or shredded cheese.

    Pour the enchilada sauce over tortillas.
  10. 10
    Bake at 350 for 20-30 minutes or until bubbly.

    (If using flour tortillas, the ends will become a little dark, but that is OK).

Really good. I used ground beef instead of the chicken. I ran out of time and didn't make enchilada sauce but used tomato sauce instead. My family loved it (we are not into spicy foods). Thanks for a great recipe that I will make many times.

    It was awesome. I was trying to find a way to use my big tin of cottage cheese and this one came out perfect. My BF said the best enchillada he had. I did make my own enchillada sauce.

    These were very good. Tasted just like the enchiladas I usually make but with half of the work! I was delighted. For those of us who like kick, just use spicy enchilada sauce. You can also sprinkle tops with jalapenos just before baking. I made only 10, and was able to squeeze them all into a 9x9 wich mde for easier clean up. Also, for those using ground beef, use 2 pounds or 2 1/2 if your real meat lovers like us Thanks for a great recipe!

    Awesome flavor and easy to make, my kind of meal! I used low fat cottage cheese, fat free sour cream and a low fat cheese blend and we didn't miss a thing. They were full of flavor without being full of fat and calories! This will definitely be our enchilada recipe of choice from here on out! Thanks!
