We made this a few nights ago with rice pad thai noodles, served the chicken in with the noodles and poured the sauce over. It was delicious! A little bit different preparation than what you have, but we liked the variation.

This was absolutely delicious! I wish I'd taken a picture - I served it on a bed of freshly cut pineapple, which I thought would go great with the coconut and peanut flavors. The sauce was good enough to lap up. (A digital thermometer is a great tool to ensure that the chicken doesn't get overcooked.) I had to marinate it overnight because of timing, and I think that boosted the flavors.

This recipe is fantastic. I made this for dinner last night. I didn't have lime juice so I made it without. I made a couple of alterations to suit my preference. I didn't use skewers because I'm not a fan of them. Also, after broiling the chicken, I heated the extra sauce in a sauce pan and place the chicken strip in the saucepan. I served it over hot rice. It was great. Thank you for sharing this recipe.

This was great! I made a couple of changes with crunchy peanut butter and coconut cream instead of milk. I served the chicken in rice wrappers with chopped fresh mint, rice, and the AMAZING peanut sauce!! Thanks Chia, we really liked this.
