Pina Colada Cake

Oh, the weather outside is frightful, But the kitchen smells delightful, I'm cooking something tropical, Let it snow, Let it Snow, Let it snow This is my son's favorite birthday cake and his birthday is in December, which is not a month you usually make a tropical summer dessert in. Which is why like us, you may just get the urge to go hang ten in your front yard in the middle of winter.. or not.

SERVES 8 (change servings and units)

Directions

    For cake, preheat oven to 350° F.
  2. 2
    Mix all ingredients well.
  3. 3
    Pour batter equally into 3 greased and floured round cake pans.
  4. 4
    Bake for 25 minutes.
  5. 5
    Cool and Frost.
  6. 6
    For Frosting: Mix dry pudding mix and pineapple, then add cool whip.
  7. 7
    Frost cooled cake, and sprinkle with coconut and refrigerate until serving.

    Warning, since the frosting has cool whip in it, exposure to heat will make it runny.

This was pretty tasty - i LOOVED the frostings - so light and and delish! But the cake seemed to be lacking a bit - not very flavorful. I'm thinking that I'll be using this frosting on the pina coloda cake from the Cake Mix Dr. book. It calls for coconut milk, pineapple, etc...

    I made this for a Christmas party, and it was a big hit. It's light and just right for a dessert following a big meal. Thanks so much for posting it. I used my stand mixer and went ahead and added the mandarin oranges before mixing. Of course, it mixed them into the batter, and it was excellent that way. I also used a 9x13 pan, and added an extra 15 minutes of time.

    Good and easy, what more could you ask for! I made mine in a 9x13 and it turned out great. I took it to a neighborhood picnic and everyone loved it. Very refreshing. The next time, I will drain the oranges, mix with cake mix and eggs than add the oranges so they do not get as broken up.

    Absolutely Delicious!! I followed the directions exactly, with a little less coconut. Also, I didn't have any round cake pans, so I used my 9x13 pyrex dish and baked for 10 minutes more than stated. Still wonderful and yummy!! It actually does taste like Pina Colada! My husband REALLY loves this cake and I plan to make it often. Thank you so much for sharing this lovely recipe!
