Baked Brie in Puff Pastry with Apricot or Raspberry Preserves

Rich, creamy, dessert like. It always disappears. I'm always asked for the recipe. Raspberry preserves goes great in this as well.

SERVES 10 (change servings and units)

Ingredients

Directions

    Preheat oven to 425.
  2. 2
    Lightly grease cookie sheet.
  3. 3
    Roll puff pastry out slightly.
  4. 4
    Place cheese wheel on top (leave rind on).
  5. 5
    Place preserves on top of cheese.
  6. 6
    Place almonds on top of preseves.
  7. 7
    Bundle Puff Pastry up and around the cheese.
  8. 8
    Bake for 20-25 minutes.
  9. 9
    Let cool for five minutes.
  10. 10
    Serve with your favorite crackers.

I used a 15oz wheel of brie, seedless rasberry preserves, and I used both sheets of pastry. It was sooooooooo good. All of my guests were in such awe and they could not believe how simple it was to make. Excellent, elegant appetizer. 5 stars for sure. So easy!

    I made this with strawberry preserves for company Friday night. It's deceptively simple to prepare and the presentation and taste are so impressive. This will be a staple of mine for entertaining from now on. I'm looking forward to trying it with different variations of preserves and nuts.

    I had never had Brie before and this sounded really good. I had never used puff pastry before either and this was SOOOO easy. I used seedless raspberry preserves and walnuts and couldn't believe how elegant it turned out. I brushed it with a mixture of 1 egg yolk and 3 T heavy cream whisked together and it got a glossy golden crust. Fast easy and impressive. Thank you!
