Green Rice

This recipe was found in the "Cooking Light" magazine. If you enjoy tomatillos, you will enjoy this.

SERVES 8 (change servings and units)

Ingredients

    Discard husks and stems from the tomatillos.
  2. 2
    Cook the tomatillos in boiling water in a medium saucepan for 4 minutes or until soft; drain.
  3. 3
    Combine the tomatillos and 2 teaspoons water in a blender and process until smooth.
  4. 4
    Pour the tomatillo mixture into a 4 cup glass measure, and add enough water to mixture to measure 2& 1/2 cups.

    Combine the tomatillo mixture, cilantro, jalapeno, salt and garlic in a saucepan, and bring to a boil.
  6. 6
    Add rice; cover mixture, reduce heat, and simmer 20 minutes or until liquid is absorbed.

    Remove from heat, and fluff with fork.

We loved this rice. I used one whole jalapeno. At the end, I added the squeeze of lime and a handful of fresh, chopped tomatoes. Delicious and has lots of flavor.

    I loved this rice! My husband and I eat rice all the time, so I'm always looking for variations on standard Mexican rice. I didn't have any fresh tomatillos, so I had to use the canned ones. I just used the juice to sub for the water in the recipe.

    This was very good. I agree that a squeeze of lime (or lemon, because I was out of lime) juice made all the difference. In fact, I'd recommend not leaving it out.

    This rice was a big hit! I had trouble finding the fresh tomatillos as well- the canned were just fine. I squeezed some fresh lime juice on the rice- it added a little more zing to it. I'll definitely make it again!
