German Potato Dumplings

The 'real thing' from my German Grandma who will be 102 in February of 2003.

SERVES 4 -6 (change servings and units)

Ingredients

    Peel raw potatoes and grate finely.
  2. 2
    Put potatoes in a bowl and press down on them while tipping bowl to pour off as much liquid as possible.

    Stir in salt.
  4. 4
    Add as much flour as needed to make a firm dough.
  5. 5
    Have a pot of boiling water ready and drop in portions of dough with a tablespoon.
  6. 6
    Boil gently, uncovered, until dumplings float.
  7. 7
    Serve with onions which have been sauteed in butter until they are caramelized, poured over top of dumplings; or also good with sauerkraut.

    You can also add some grated onion to the dumpling dough if you like (about a tablespoon).

    Leftovers are good sliced and fried in butter.

wonderul! these are the same dumplings my oma used to make. i've had a hard time trying to find a recipe without the extra stuff in them. simplicity at its best!

    Easy. I used vegetable bouliion powder mixed in the boiling water. I carmelized onions on the side, too. Sliced up a small onion and slow cooked in margarine with a little bit of sugar for 35-40 minutes while preparing the meal. Served with Leeks and apples Sautéed Green Apples and Leeks and German Muffins Old German Muffins. Wish I had leftovers to slice up the next morning for frying!
