1-Hour Ham and Bean Soup

Made this one up myself, from a mix of different recipes. No need to wait for dry beans to soak. You get great homemade soup in about an hour!

Ingredients

  • tablespoons vegetable oil
  • cup diced or sliced carrot
  • cup diced celery
  • cup chopped onion
  • cups diced ham
  • 1/2 teaspoon minced garlic
  • 3 1/2 cups ham stock or chicken broth (water can be substituted)
  • 2 (15 1/2 ounce) cans great northern beans, not drained
  • 3-4 tablespoons tomato sauce
  • pepper
  • Directions

    1. 1
      Heat vegetable oil in a soup pot.

      Add carrots, celery and onion.
    3. 3
      Sauté for about 4 minutes, just until onion is beginning to soften.

      Add ham, sauté 2 minutes.

      Add garlic, sauté one more minute.
    6. 6
      Add 3 cups stock, bring to a low boil for about 10 minutes, stirring once or twice.

      Meanwhile, in a food processor, combine all but 1/2 of a can of beans, including juice, and the tomato sauce.

      Process until smooth.

      Add remaining stock to processor to thin mixture.

      Process to combine.

      Add mixture from processor into ham mixture.

      Add remaining 1/2 can of beans, stir to blend, bring to a boil, lower heat, cover and simmer for 30 minutes.

      Serve hot!

    I followed the recipe exactly as listed except I used black beans in place of the great northern beans and only pureed half of the beans. Like some of the others, I will probably add 1 more can of whole beans. I will probably also add some chopped jalapeno peppers before serving, for extra flavor. This was a great last-minute dinner, very quick and easy to make, and my husband loved it. Will certainly be making this soup again. Thanks for sharing a great recipe, Kelly!

    My husband said that this was in his top 5, possibly 3, soups ever. We thought it was better after a day in the fridge. I thought this was a bit bland. I used 2 T. tomato sauce and will add more next time. I think I'll add more garlic as well. This was an easy soup to make and have all of the ingredients on hand.

    I have loved Campbell's bean and bacon soup since I was a kid... this soup reminds me a lot of the Campbell's version, and now I can enjoy the homecooked version! I love it! I have two comments/adjustments I would do next time I make this recipe (and there will be many more next times): 1) Definitely use more whole beans. I am going to try pureeing 2 cans of beans, and then adding 1 full can of whole beans to the soup. 2) I added 1 cup of milk to the puree mixture instead of the 1/2 cup of ham stock for a creamier version of the soup, and I think it turned out quite well!

    This was a great easy soup, I ended up using 3 cans of beans, I pureed one whole can of beans with some of the soup mixture after it had cooked for awhile which included some of the ham and vegetables which gives the base a lot more depth of flavors.
