Mennonite Chicken Dumpling Casserole recipe

This is an AWESOME recipe- strong basil flavor! Hope you enjoy this as much as we do! A traditional comfort food - great on those cool winter days & nights! ENJOY!

SERVES 6 (change servings and units)

Ingredients

Directions

    In a large saucepan, saute onion, celery and garlic in butter until tender.
  2. 2
    Add flour, sugar, salt, basil, pepper& broth; bring to a boil.
  3. 3
    Cook& stir for 1 minute; reduce heat.
  4. 4
    Add peas& cook for 5 minutes, stirring constantly.
  5. 5
    Stir in chicken.
  6. 6
    Pour into a greased 9x13 pan.

    DUMPLINGS: Combine biscuit mix& basil (2 t.) in a bowl.

    Stir in milk w/ a fork until moistened.

    Drop by tablespoon onto casserole (12 dumplings).
  10. 10
    Bake uncovered@ 350 for 30 minutes.

    Cover& bake 10 minutes longer or until dumplings are done.

Delicious! I used a 10 oz. bag of peas and carrots and I also topped it with Grand's buttermilk biscuits at the end. This one is a keeper!!

    This recipe didn't quite meet my expectations. I am planning to try it again in a couple of weeks. I am thinking that I may have missed something in preparation. My 19 year old son liked it very well, and just couln't seem to get enough of it.
