Butter Pecan Fudge

    Coat an 8-inch square baking dish with nonstick cooking spray.
  2. 2
    In a large saucepan, bring the butter, heavy cream, granulated sugar, brown sugar, and salt to a boil over medium heat, stirring frequently.

    Allow to boil for 5 minutes, stirring constantly, then remove the pan from the heat.

    Stir in the pecans and vanilla.
  5. 5
    Add the confections' sugar and stir until smooth and well combined.
  6. 6
    Spread the mixture into the baking dish.

    Allow to cool to room temperature then cut into 1-inch squares and serve, or store in an airtight container until ready to serve.

    Yes, I really do agree that this IS one of the best fudge recipes! very simple and easy to make without any candy thermometer...ready in 5 minutes!..and it has never failed me once. I have this recipe from Taste of Home, and it is the one I use very often, just don't make the mistake of subbing evaporated milk for the whip cream, I did try that once, and it did not set properly. This fudge is a must try, I have made it even without any nuts... tip: sift your 2 cups of icing sugar first, that aids in reducing any tiny lumps that may remain in the fudge after mixing... I always mix with a whisk instead of a spoon, this seems to incororate the icing sugar better. Thank you for posting this wonderful fudge recipe Theresa! 25 stars for this one! Kittencal

    We all really enjoyed this a lot. I toasted the pecans in a saute with butter, then removed the nuts from the butter to a paper towel, to allow any excess to drip off. I left the residual butter in the pan, which was lightly browned and with a hint of pecan taste, and proceeded with recipe. Yummy and very easy, thank you, Theresa.
