Swiss, Ham, Potato Soup

Recipe #46797 | 40 min | add private note

One of my most requested "soup of the day" recipes from when I was in the food business. Swiss cheese gives this soup the most delectable flavor.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
Cook diced potatoes in saucepan with just enough water to cover.
  2. 2
When tender, drain the liquid from the potatoes and save.
  3. 3
Set both aside while making roux.
  4. 4
    In large saucepan, melt margarine.
  5. 5
Saute the chopped green onions until tender.
  6. 6
Remove onion from pan and set aside.
  7. 7
Add flour to melted margarine and stir until incorporated.
  8. 8
Cook over medium heat until the roux begins to just turn a golden color.
  9. 9
Using a whisk, stir in 2 cups of milk and 1 cup of the saved potato liquid.
  10. 10
Whisk until smooth and no lumps are seen.
  11. 11
Bring just to a boil or until the soup thickens.
  12. 12
Add the diced ham, cooked onion and the Swiss cheese.
  13. 13
    Stir until cheese is melted.
  14. 14
Add salt& pepper to your preference.
  15. 15
    I usually add 1 tsp.
  16. 16
    salt and 1/2 tsp.
  17. 17
    pepper.
  18. 18
    Stir well.
  19. 19
If soup is too thick, you may add the final cup of milk.
  20. 20
    My bunch likes it thick.

This hit the spot! I can see why your customers loved it. Added bacon, garlic as suggested. I made a mistake and threw away my potato liquid too early, so I subbed some chicken stock. I'll make this again and again.

I added a half of teaspoon of garlic powder to the recipe and it gave it great flavor! The family enjoyed it.

We really enjoyed this soup, Susie! Loved the combination of ingredients. Can't wait to make it again experimenting with other types of cheese. Your instructions are easy to follow. I added just a little bit more milk to thin it out a bit. Thanks you for sharing such a great soup recipe.

MMm! That says it all! Hands down, a 5-star keeper! Next time we'll add some minced garlic - and who knows - maybe even some crumbled bacon - but this recipe really is perfect as-is! (we just adore garlic here..) My kids DON'T eat Swiss cheese - but GOBBLED this up - added some more milk to thin it a bit - lovely, wonderful, new addition to our favorite recipes. Thank you!
