Jamaica Banana Jam

Recipe #46287 | 20 min | 20 min prep | add private note

By: Sweet Tooth™
Nov 16, 2002

If you like banana and peanut-butter sandwiches, you'll love this jam and peanut-butter on a sandwich! (Recipe courtesy: Elizabeth Barcelo)

4 cups (change servings and units)

Ingredients

Directions

  1. 1
Place lime juice in a one quart measure.
  2. 2
Peel bananas and dice directly into lime juice.
  3. 3
    Stir with a wooden spoon.
  4. 4
Keep stirring as you dice each banana into the lime juice to prevent darkening.
  5. 5
Measure sugar and water into a wide 2½ quart saucepan, and stir to dissolve sugar as you bring syrup to a boil.
  6. 6
Cover tightly for the first 2 minutes (so the steam will wash sugar crystals from side of saucepan) then uncover, add bananas (with lime) and boil over low heat for about 30 minutes or until thick.
  7. 7
Stir often to prevent sticking, especially during last 10 minutes.
  8. 8
Jam is done when a spoon scraped across bottom of pan leaves a track that closes slowly, or when jam mounds while stirring.
  9. 9
Spoon at once into hot sterilized jars and seal.
  10. 10
Do not use paraffin with this jam.

This was ok, it turned out great, it just wasn't my favorite.... wouldn't make again but if you really like bananas give it a try... it is a different spread with an interesting flavour....

Even though it wasn't a great success with the rest of the family (all the more for me!) I've really enjoyed this jam.

Use 400g banana and 125g canned crushed pineapple. The juice i drained and use it in place of 1/2c water. cooked mine 45min before the mixture turned into mush. It gelled up nicely.
