Parchment Potatoes

This is a great, showy side dish, as delicious as it is attractive.

Ingredients

  • For each serving you will need

      In the center of the square, place the cheese, rosemary, garlic and onion.

      Place the potatoes on top, cutting them in half if necessary.
    3. 3
      Pour the oil over.
    4. 4
      Take 2 opposite points of the foil, fold over the potatoes tightly.
    5. 5
      Do the same with the other two opposite sides, making a compact"envelope" shape.

      Place seam side down on a baking sheet; bake at 350F for 45 minutes.

      To serve, place seam side down on each plate; with scissors or sharp knife, cut a large X in the center.

      Peel back the points, making like flower petals, and serve.

    I love this dish!! I give it 5 * for g-r-e-a-t taste and easy preparation. Have made it 2X in the last week or so and am working on eliminating the sticky aspects when using aluminum foil. Sprayed the foil first with olive oil which helped a lot, replacing the oil poured over. Going to try putting the onion & garlic (which is what stuck the most) on last. I used marjoram in place of rosemary. We baked ours in the electric BBQ!

    Very easy, very tasty, but the cheese stuck to the foil, so I turned them out on the plate, and salvaged as much of the cheese as possible. I think parchment paper would be the better option, and will use it next time.

    I did two large packages for 4 people then placed them in a bowl to serve. Mine stuck a bit too but not too badly. The rosemary imparts a nice flavour.
