Potato, Apple, and Celery Salad

This is a great change from regular potato salad! Love it! An English take on a French recipe, now all American!

SERVES 6 (change servings and units)

Ingredients

Vinaigrette

Directions

    Put the potatoes into a large saucepan of boiling salted waer and simmer gently for 10-15 minutes, until just tender.

    Drain, leave to cool, then cut the potatoes in half.
  3. 3
    Put the potatoes into a large salad bowl, add the vinaigrette dressing, and toss gently while the potatoes are still warm.

    Add the celery, onion, and apples to the potatoes.
  5. 5
    Mix together gently so that all the ingredients are thoroughly coated with the dressing, then add salt and pepper to taste.

    Cover and chill for at least 1 hour.

    Gently stir in the mayonnaise, taste for seasoning, sprinkle with the chives, and serve immediately.

    Vinaigrette Dressing: Put all into a screw-top jar and shake until well combined.

    Makes 2/3 cup.

What a great combination of flavours this salad has! I made it up on Saturday night to take to the beach with us on Sunday. Everyone enjoyed it. I especially liked the combination of apple and celery. The dressing was spot on - just tart and sweet enough.

    A nice change for potato salad--we enjoyed the apple/celery/potato combination that is great with barbecued meals.

    I Also used red potatoes, could not find the new taters as directed in the recipes. Didn't have any chives either. Other than that I followed the recipe exactly Turned out great & everyone loved it. A very nice change from regular potato salad.

    Oustanding flavor! That vinaigarette really adds a wonderful taste! I used red potatoes (diced) and gala apples. Perfect balance of creamy and crunchy and sweet and tart. This is one of those potato salads that is sure to impress your guests. Thanx!
