Ingredients
- 1 1/2 lbs potatoes, peeled and cut into 2 inch chunks
- 1 teaspoon salt, divided
- 1 1/2 cups chopped green cabbage
- 1/3 cup finely chopped green onion
- 2 cups boiling water
- 2/3 cup milk
- 2 tablespoons butter or margarine
- 1/8 teaspoon finely ground pepper
Directions

Place potatoes with cold water to cover by 2 inches and ½ tsp salt in large saucepan.2
Bring to a boil for 5 minutes.3
Add cabbage and boil for 10 more minutes until potatoes are tender.4
Meanwhile, place green onion in sieve, pour boiling water over them and drain.5
Add drained onion to a medium saucepan with milk, butter, remaining ½ tsp salt and pepper, bring to a boil then remove from heat.6
Drain cooked potatoes and cabbage and return to large saucepan.7
Beat on low speed with hand held mixer until coarsely mashed.8
Increase speed to high and gradually add milk and onion mixture and continue to beat until potatoes are light and fluffy.

I've been wanting to try this dish for a long time, and have finally gotten around to it. What was I waiting for????? This is absolutely fantastic!!!!!! I had some sour cream that I used in place of the milk, and it worked out very well. I'll be making this more often. Thanks so much for a terrific recipe.

This was good, but my tastebuds weren't thrilled (but with mashed potatoes and cabbage, I wasn't really expecting them to be thrilled--so mission accomplished). I DO really appreciate being able to turn a starchy food into something that brings a little more to the party than just carbohydrates. It rounded out a dinner with Irish Stew and soda bread for St. Paddy's.

Excellent dish!!! Made for St Patricks day dinner (along with Derf's Corned beef #14537). A wonderful change from mashed potatoes and definitely a keeper!!

I saw the picture of this recipe that Fairy Nuff posted, and had to try it with our corned beef. I'm so glad I did. We loved the recipe. It's the perfect side dish for corned beef, but I plan to make it with other dishes, too. We loved the green onions and the creamy texture. Thanks for posting.
