Vanilla Sweet Potatoes

I found this recipe in Cooking Light Magazine and it's quickly become a family favorite. Even non-sweet potato lovers like this dish.

    Pierce potatoes with a fork, and arrange in a circle on paper towels in microwave oven.

    Microwave at high 10 minutes or until tender, rearranging potatoes after 5 minutes.

    Wrap in a towel; let stand 5 minutes.
  4. 4
    Peel and mash potatoes.
  5. 5
    Combine with milk and remaining ingredients.
  6. 6
    Place in a 1-quart casserole; cover and microwave on medium for 7 minutes, or until thoroughly heated.

I enjoyed this recipe. I can find canned mashed sweet potatoes here in 1 lb cans. I just microwaved the mashed sweet potatoes until hot and added half the other ingredients as directed. After a couple more minutes in the microwave (on high), it was great! Very good, easy, and healthy. Thanks for posting.

    Healthy, easy, delicious and easy to cut in half. I thought the vanilla sounded like a lot but found it to be the perfect amount of flavoring. I served these along side Chicken Diane and there was a great balance of tangy/sweet flavors.

    Very tasty and very easy! I used a lowfat vanilla soy milk instead of 1% and splenda brown sugar blend in place of regular brown sugar, but it still turned out great! I'll definitely be making this again!

    These were very tasty but some in my family didn't find them to be sweet enough. And unfortunately those that didn't generally like sweet potatos didn't like these either. On the other hand, the sweet potato lovers in my family that actually like the taste of sweet potato instead of sugary sweet potato,like myself, loved this dish.
