Italian Turkey Sausage and Peppers with Bowtie Pasta

I just threw this together one night with ingredients I had on hand. We loved the flavor and it's now a favorite after work meal.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Saute onion, peppers and pepper flakes in olive oil until onions start to brown.
  2. 2
    Add garlic, salt, pepper, basil and oregano.
  3. 3
    Set aside.
  4. 4
    Prick sausage links with a fork.
  5. 5
    Saute in skillet with a little olive oil over medium heat until brown.
  6. 6
    Add wine vinegar and canned tomatoes (with liquid).
  7. 7
    Add the sauteed vegetable mixture.
  8. 8
    Cover and simmer for 20 minutes.

    Meanwhile cook pasta al dente.
  10. 10
    Add cooked pasta to sausage and pepper mixture.

    Stir and serve.

Pretty darn good! We omitted the green pepper and used tofu sausage; upped the red pepper flakes (love spicy) and used balsamic instead of red wine vinegar. Took MeccaJean's suggestion and added some feta as well. This was a very tasty dish that received high marks all around the table. Thanks!

    Delicious! Great flavor. Real Italian. I would use about 1/4t. of red pepper flakes, if any at all. (I substituted penne & gemelli since I didn't have bowtie on hand.)

    Spices are everything and this recipe falls in that catagory. Very easy and quick. I will make again maybe with some chicken breast. Loved it thank you.
