Bacon Rollups

From an old 1979 issue of Southern Living. My 21 year old son still requests this treat often.

48 rollups (change servings and units)

Ingredients

Directions

    Combine cream cheese and milk (or mayonnaise) stirring until of spreading consistency.
  2. 2
    Spread 1 teaspoon of cheese mixture on each halved bread slice.
  3. 3
    Roll tightly from the smallest end.
  4. 4
    Wrap with bacon and secure with toothpick.
  5. 5
    Place on broiler pan.
  6. 6
    Bake at 350 degrees Fahrenheit for 30 minutes.

    Turn if necessary.
  8. 8
    Garnish with parsley if desired.
  9. 9
    Note: These may be assembled ahead of time and frozen before cooking. To serve, remove frozen rollups from freezer and allow to thaw in the refrigerator over night. Then bake at 350 degrees Fahrenheit for 30 to 40 minutes.

    I found that they were a little boring. It could of been the bread or the bacon. I just thought it would of had a lot of more flavor.

    I made these for a brunch and they were gone in no time! I loved the fact that I could make them a few days in advance and freeze them. I ended up using white bread instead of the mixed grain but I'm sure the mixed grain tastes better. I baked them for 30 minutes and then broiled them for a moment just to toast the bread a golden brown. I think I will serve this at my next brunch as well!

    Extremely yummy! Since it was just my little family eating these with dinner, I put them all on thin skewers. This made turning them very easy. I didn't time the baking, but I baked them until crispy on one side, turned them, dabbed up all the visible fat, then let them brown on the other side. I think next time I will try garlic salt in the cream cheese and lean bacon. Bacon around here seems to have more meat on one side than the other and I loved the ones with extra meat. The chives were a great touch and the kind of bread used definitely influences the overall flavor. I made 40 rolls and it extactly used up 1 loaf of oat bread, one pound of bacon, and all of the cream cheese (but it's easy to go lighter or heavier on the cream cheese if you need to adjust.) This is a certain keeper!
