This is a great way to use honey graham crackers. The muffins turn out really moist and flavorful. Scrumptious!

    Preheat oven to 400°F.

    Place cupcake liners in muffin pan and set aside.
  3. 3
    In a medium mixing bowl combine crackers, sugar and baking powder.
  4. 4
    In a separate bowl lightly beat milk, egg whites, honey, and cinnamon.
  5. 5
    Add the milk mixture to the cracker mixture and stir just until moistened.
  6. 6
    Spoon batter into muffin pan and bake for about 15 minutes.

    Let stand 5 minutes; remove from pan.

They were o.k. For us they needed something else in it. I tried adding applesause to our second batch and they came out better.

    I was a little bored by these. They were very moist but I wasn't all that into the flavor. Next time I may try putting a middle layer of marshmallows and chocolate chips for a s'mores effect.

    These are wonderful tasting muffins! They have a nice texture as well. The only change I made was to use whole milk instead of skim, because thats just what we had. Still came out great! If you are making your own crumbs in the food processer, you get about 3 cups from 2 inner packages of crackers. 3 cups = 2/3 of a 14 oz box of crackers.

    A friend sent this to me after hearing me complain that I needed to use up some graham crackers. Reluctantly, I threw together a batch. Amazing! These are excellent and not just in a "had to use something up" way. Thanks!
