Brat, Beer and Cheese Soup

This is a recipe from one of the Penzey spice catalogs. Delicious!

SERVES 8 (change servings and units)

Ingredients

Directions

    Heat olive oil in soup pot over medium heat.
  2. 2
    Add onion, celery and carrots.
  3. 3
    Cook about 15 minutes or until tender, stirring every so often to keep from sticking.

    Stir in flour, cook about 1 minute.
  5. 5
    Add potatoes, stock and beer.
  6. 6
    Bring to a boil and cook 10- 15 minutes or until potatoes are tender.

    Add mustard powder, granulated garlic, salt and peppers.
  8. 8
    Combine milk and Worcestershire sauce in a small bowl.
  9. 9
    Stir into soup.

    Remove soup from heat.
  11. 11
    Add cheese, stirring until cheese is melted and smooth.

    Remove 2 cups of vegetables with some liquid and add to a blender or food processor.

    Puree.

    Stir back into the soup to give it nice body.

    Return to low heat and add sliced, cooked bratwurst.

    Cook until bratwurst is warm- about 5 minutes.

    We really liked this soup. I will definately be making it again. This time I didn't change anything, but I look forward to experimenting with different flavors of brats and beer. Thanks for sharing!

    I wish I had the time to review all of the fantastic recipes I've made from Zaar. But after making this soup last night I just had to take the time to give it 5 stars! It's worth noting that I live in SW Florida and we hardly ever have 'soup weather' especially in July as I'm writing this. But, I've had a craving for something different and soup like and this soup filled the bill! I made it as written with possibly adding a little more dried mustard, cayenne pepper and I used 5 bratwurst. Also, to precook the bratwurst I first browned them in olive oil then braised them for about 20 minutes in beer. The soup was easy to put together because of the great directions and it was full of flavor! Thanks PanNan for a great recipe that I'll make often, even if it is 100 degrees outside!

    This soup was very yummy! I froze the leftover soup I had and it freezes very well. This will be a nice warm up for a cold football Sunday, thank you.
