Vicki's Gourmet Potatoes

This has been a holiday tradition and special occasion dish in our home and with our friends...I usually serve them with baked ham, but when the meal calls for mashed potatoes, and you want to give your family a treat, I suggest you try these! YUM!

Ingredients

  • 6-8 large potato, peeled and diced
  • teaspoon salt
  • 1/8 teaspoon garlic salt
  • teaspoon grated onion
  • tablespoons butter or margarine
  • ounces cream cheese, softened
  • 1 (8 ounce) container sour cream
  • cup grated cheese (optional)
  • Directions

    1. 1
      Cook potatoes in salted water until tender.
    2. 2
      (About 10 minutes from time water gently boils) Drain.
    3. 3
      Combine potatoes with salts, onion, butter, cream cheese, and sour cream.
    4. 4
      Whip until mixture is smooth and fluffy.
    5. 5
      Place in buttered 2-qt.
    6. 6
      casserole.

      Top with grated cheese if desired.

      (May be covered and refrigerated overnight or frozen at this point, if desired) Bake at 350 for 30 minutes or until golden brown.

    I had very high hopes for this recipe, but it was very bland to our palette. They are very creamy - VERY - but I think I will add some more garlic salt to the portion I have frozen.

    A friend asked you lovelies for potato recipes that I could freeze into serving size portions. This looked like it would fit the bill perfectly. We loved it! Thanks for all your help. I've signed up now and Sweetie wants to know "what's next"?

    I used Yukon Gold potatoes for this recipe and followed Silent Cricket's directions from there and omitted the grated cheese. These potatoes are creamy and flavorful and fit for a dinner party. I will be serving these often! Excellent recipe and worthy of 5 stars!

    These were "over the top" fabulous! I doubled the recipe for a small dinner party of 15 and there was not a bit left! I also was not sure what type of cheese to top them with, so I used sharp cheddar. These reminded me of twice baked potatoes without the shell Wonderful presentation and EVERYONE raved over them...thanks for sharing!
