A simple, quick, scrumptious, summer dessert, and healthy too!! from Cooking for Diabetics

SERVES 4 (change servings and units)

Ingredients

Directions

    Cut the peaches in half, remove the pits and then slice the flesh into thin wedges.
  2. 2
    Mix the peaches and raspberries with the yogurt in a bowl, then spoon into 4 sundae glasses and chill.
  3. 3
    Spread out the rolled oats and almonds in a broiler pan.
  4. 4
    Broil them until lightly toasted, shaking the pan frequently.
  5. 5
    Cool, then sprinkle the oat mixture over the dessert and serve.

    YUM! I just made this treat for dessert and used strawberries instead of raspberries. To make the yogurt extra creamy I drained it with a cheese cloth so it was like cream cheese texture. So good and good for you! Next time I may spice up the oats by adding some cinnamon perhaps.
