Crab Stuffed Chicken (Aka Fancy Chicken)

I was searching the internet 2 valentines days ago for a romantic, not too foo-fooey recipe and found this (don't remember what site). This is now my BH's version of comfort food, whenever he feels down he asks me to make "that fancy chicken". I like to serve it with garlic mashed potatoes.

Ingredients

  • ounces cream cheese, softened
  • 1 (6 ounce) can lump crabmeat (I actually use more)
  • 1 (2 1/4 ounce) envelope Lipton Recipe Secrets savory herb with garlic soup mix
  • 4 boneless skinless chicken breast
  • 1/4 cup flour
  • 2 egg, beaten
  • 3/4 cup plain breadcrumbs (I prefer seasoned crumbs)
  • tablespoons olive oil
  • 1 1/2 tablespoons butter
  • Directions

    1. 1
      Combine cream cheese, crabmeat, and soup mix, set aside.
    2. 2
      Cut a 'pocket' into the side of each chicken breast (be sure not to cut all the way through!).
    3. 3
      Fill each pocket with the cream cheese mixture and close the opening with toothpicks.

      Dip chicken breasts in flour-> Eggs-> Breadcrumbs.

      In large skillet, melt oil and butter over medium-high heat.

      Add chicken to skillet, cook for 10 minutes, or till golden brown, turning once.

      Transfer chicken to 13x9 pan and bake in a 350°F oven, uncovered, for 15 minutes or until chicken is done.

    Very good combo. I went to two grocery stores and could not find the soup mix. So I just used one of those "Mrs. Dash" that was herb and garlic. I also used imitation crab, but it still turned out very tasty. I used all the filling, but it was almost too much. I think next time I make it I will either cute the recipe in half, or cook 5-6 breasts instead of 4. Thanks for this tasty chicken dish.

    My husband made this for me for Valentines Day and it was amazing. I loved it. I can't wait for him to make it again. LOL This was very easy to make from what he told me, and we both just loved it. Thanks for the recipe.

    I realize this recipe has received many reviews but I just had to add mine too. I'm considered a very good cook and I'll tell you this was delicious! I only added about half the dry soup and used imitation crab but it was definitely a WOW

    This dish is so fabulous, that I'd eat it once a week. I thought that it might need a sauce, but when I tasted it, it was perfect. So moist and delicious. Two thumbs way up!!!
