Almond Crusted Chicken Fingers

Lovely crunchy almond chicken, serve with coleslaw and oven fries, for a nice summer supper. from the local newpaper.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 400f degrees,.

    Lightly grease a baking sheet.
  3. 3
    In a shallow bowl, whisk milk and egg together.
  4. 4
    Place half the flour in another bowl, in a separate bowl stir almonds with the remaining flour.
  5. 5
    To each bowl, stir in 1/4 teaspoon salt.
  6. 6
    Slice chicken into finger size strips.
  7. 7
    Sprinkle both sides of chicken with salt and pepper.
  8. 8
    Lightly coat chicken strips with flour, followed by milk mixture, then coat with almond mixture.

    Heat oil in a large frying pan over medium high heat.
  10. 10
    Add chicken, cook in two batches, adding more oil if necessary, until golden, about 1 to 2 minutes on each side.

    Chicken will not be cooked through.
  12. 12
    Transfer to baking sheet.

    Bake in centre of preheated oven until cooked through, about 6 to 8 minutes.

This is the most tender delicious chicken I have ever had. My wife is requesting I make it again tonight. When putting it in the oven we cut up peices of smart choice butter and melted on top of the chicken to keep it tender. DO YOURSELF A FAVOR AND TRY THIS CHICKEN TONIGHT!!!

    This was easy to prepare & quite tasty. I used frozen chicken strips & finely chopped almonds. I did find it just a bit bland for my taste.

    I cooked these totally in the oven at 400 degrees for about 30 min.using a baking sheet sprayed with cooking spray and a quick spritz of cooking spray on each strip. They turned out just fine.

    Mmmmmm! Easy to make, very tasty. Lots of egg/milk left over though, so you can double the recipe and still use only one egg and a half cup of milk.
