Easy Hot Cross Muffins

A twist on the hot cross buns recipe. I have not tried this yet, but thought someone might like too 8)

12 muffins (change servings and units)

Ingredients

    Heat oven to 375° and prepare pans.
  2. 2
    In bowl combine the first 6 ingredients.
  3. 3
    In separate bowl, stir together remaining ingredients except currants.
  4. 4
    Add dry mixture to wet mixture until just combined; stir in currants.
  5. 5
    Spoon into tins.
  6. 6
    Bake 15-20 minutes or until done.
  7. 7
    Allow them to cool 5 minutes before removing muffins from pans.
  8. 8
    To make the glaze: Combine ingredients, then drizzle over each muffin to form a cross.

Very yummy muffin recipe which were enjoyed by all.The citrus zest taste really dominates in this rather than the cinnamon and allspice.

    These muffins have the exact flavour of hot cross buns! These were easy to make, and took the whole 20 min. in my oven. The spicing is just right, mild but still interesting. I made a little more icing than was called for and just drizzled it on randomly. The only change I made was I substituted chopped dates for the currants as that is what I had available. The dates went really well with the rest of the ingredients, and would not hesitate to make them that way again. I also waited about 30 min. after taking them out of the oven before drizzling on the glaze (didn't want it to melt off). Really delicious and fast too, faster than making or even going out to buy hot cross buns!
