Ramen Fried " Rice"

This is like fried rice but it's done more quickly! We love this about once a week!

SERVES 4 (change servings and units)

Ingredients

    Break the noodles into about 6 pieces into a bowl, sprinkle with the contents of the seasoning packet and pour boiling water over to cover.

    Stir a bit and let soak while you prepare the rest of the recipe.

    Rinse peas with hot water in a colander to defrost.
  4. 4
    Mix together the eggs, sesame oil, and pepper and set aside.
  5. 5
    Heat a wok or large skillet and add the oil.
  6. 6
    Add the garlic and green onions and stir-fry for 30 seconds.
  7. 7
    Add optional meat and peas and stir fry until hot, about 1 minutes.

    Drain the noodles well, add to the skillet and stir fry for another 2 minutes, stirring constantly.

    Stir in the soy sauce until well distributed.
  10. 10
    Pour the eggs into the skillet and continue to cook and stir, until the bits of egg are cooked.

    Serve at once.

Very good. Used edamame instead of peas, omitted egg, added ginger and used a meat substitute called Veat. Next time I'll mix in a little spice, maybe some Rooster sauce?

    Inexpensive, flavorful and YUMMY! I love how many different versions you can make by switching up the protein and/or soup flavor. GREAT RECIPE, but definitely does not make 4 servings!

    First Rate! I'm a big time Ramen freak and I'm always looking for new ways to prepare them. Because my blood pressure is a bit high I watch the salt or more properly the Sodium. About 98% of the 'flavor packet' is MSG, disodium inosynate, and disodium guanylate. The rest is coloring, thickeners, sweetening, and the last bit is flavor, artificial of course. Needless to say I don't use them. For this recipe I used Tofu and a handful of 40 count Shrimp. I put the Shrimp in with the Noodles at step 1, by the time all was done they were cooked to perfection. Thanx, Pierre

    Made this last night alongside some marinated steak tips and fresh green beans. It was really good! I added some tiny shrimp to it, and they gave it a nice flavor. My only suggestion is to use a nonstick skillet, if you have one, which I don't. I don't usually have problems with my calphalon, but the noodles stuck. Anyway, this is a very good and easy side dish!
