Vegan Truffles

Incredibly yummy vegan truffles.

50 truffles (change servings and units)

Ingredients

    Put cashews and cold water in a blender and blend at high speed for 1-2 minutes (yes a long time).
  2. 2
    Scrape the sides down and blend again until the mixture is the consistency of heavy cream.
  3. 3
    Meanwhile, in a double boiler heat the chocolate until it's all melted.
  4. 4
    Cool the chocolate until it's comfortable to work with and fold in the cashew cream (making sure not to stir too fast or you'll create bubbles).
  5. 5
    Cool in the fridge for 2 hours (to set).
  6. 6
    Take out a small ball, roll in cocoa powder and store in fridge/freezer.
  7. 7
    Repeat until done.

Wow. These got even better reviews than my standard truffles with vegan cream cheese! They were SO easy and so delicious. I coated some of them in toasted coconut (unsweetened) and added a little bit of coconut flavoring to that bunch. SO VERY GOOD.

    OH MY GOODNESS !!! , This is the best truffle recipe I have ever made. It is easy and I rolled mine in finely chopped roasted cashews today, DELICIOUS !!!! I have made them a few times and they just get better. I do put the raw cashews and water together in the fridge until I am ready to make these. It is very neat how the raw cashews and water look and act just like cream. ENJOY !!!

    I would love to give these more stars if I could. Rich, creamy, deep chocolate truffles. I didn't think anything could be better than the Dove Dark I used to be obsessed with, but this is truly even better!! These certainly satisfy my chocolate cravings. I made them into very small bite size balls and rolled them in unsweetened coconut. No way can you eat just one... FANTASTIC recipe, Zeke!
