Really Good Vegetarian Meatloaf (really!)

High in fiber and protein, low in fat, easy and really yummy! I've always think meatloaf looks and smells so delicious and savory so, as a vegetarian, I decided to make a no-meat version! This is basically our favorite meatloaf recipe but with cooked mashed lentils instead of ground meat. The result is a very tasty dinner!

Ingredients

  • cups water
  • teaspoon salt
  • cup lentils
  • small onion, diced
  • cup quick-cooking oat
  • 3/4 cup grated cheese (cheddar, swiss, jack or american)
  • 1 egg, beaten
  • 4 1/2 ounces spaghetti sauce or tomato sauce
  • teaspoon garlic powder
  • teaspoon dried basil
  • tablespoon dried parsley
  • 1/2 teaspoon seasoning salt
  • 1/4 teaspoon black pepper
  • Directions

      Add salt to water and boil in a saucepan.

      Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.

      Remove from fire.

      Drain and partially mash lentils.

      Scrape into mixing bowl and allow to cool slightly.

      Stir in onion, oats and cheese until mixed.

      Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper.

      Mix well.

      Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.

      Smooth top with back of spoon.

      Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.

      Cool in pan on rack for about 10 minutes.

      Run a sharp knife around edges of pan then turn out loaf onto serving platter.

    I have made this recipe this morning, doubling the ingredients as I wanted to take one to a friend later. I love it. My son, who is a meat eater said he thought it tasted like Indian cooking. Although I don't think this is anywhere near a meatloaf the dish is wonderful and has a thumbs up from this vegetarian momma.

    I love this recipe! I used tomato sauce and it worked well, and followed the recipe as written. (I don't much like barbecue sauce anyway.) I think this is an excellent substitute for meatloaf, I thought the texture was pretty close, and the taste is similar. It is way less greasy, which is a plus for me. I'm trying to eat less meat and I love this recipe because it doesn't try to use fake stuff like beef-flavored tofu or soy cheese. Personal preference, I guess. I think if you like meatloaf and you like vegetables, you will be pleasantly surprised by this recipe.

    This was Really Good (really!) I followed the paths of the other reviewers and used bbq sauce in lieu of the tomato sauce, and added celery. I also used fresh garlic instead of powdered and served this with Mille® ™'s Fungus Gravy (#31871, which is really just a mushroom gravy, but that's Miller for you.) I sprinkled a little grated cheese on top too, which was nice. My only problem was that this turned out a bit crumbly. I think that perhaps I cooked the lentils too long? Or I didn't add enough barbeque sauce? In any case, I can tell you right now that I will be making this again and again- a fabulous, meatless, low-fat, high-protein, high-fiber, and economical meal. It may not be meatloaf per se, but I think I just might like it better! Thanks so much for posting/inventing this.

    The basic recipe is great. I added celery, red onion and mixed BBQ sauce with the tomato sauce to make it even better. I know sell it in my store.
