Lamb Burgers with Minted Tzatziki

For lamb lovers these are a lovely change from the "normal" grilled burger. Do not over-cook.

SERVES 4 (change servings and units)

Ingredients

Directions

    For the mint tzatziki blend the yogurt with the oil and lemon juice.
  2. 2
    Add the cucumber, onion, garlic, mint, and pepper.
  3. 3
    Taste and add salt.
  4. 4
    Cover and refrigerate while preparing the lamb burgers.
  5. 5
    Preheat grill to medium high.
  6. 6
    In a large bowl, combine lamb and remaining ingredients.
  7. 7
    Form into 12 small patties around 3/4 of an inch thick.
  8. 8
    Place on hot grill and cook 5 minutes on the first side, four on the other.

    You want the outside nicely browned with a bit of pink remaining in the middle.

    Serve three each in a pita half with the shredded lettuce, tomato, cucumber and onion.

    Offer the Minted Tzatziki at the table.

    So good! The whole family loved these burgers. I'm not a "burger person", but I really loved these. I did add a generous 1/2 cup of crumbled feta cheese to the meat mixture. Very flavorful. I will make these often. Thanx!

    This was a good family meal. Loved the tzatziki over the burger-tasted great. We ate this with a salad, and Erin Ecklund's Italian Potatoes Italian Potatoes.
