Lazy Pierogie Casserole

The taste of pierogies without all the fuss!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Cook lasagna noodles and drain.
  2. 2
    Line bottom of 9x13 pan with a single layer of noodles.
  3. 3
    In bowl mix mashed potatoes, cheese, egg, and spices.
  4. 4
    Spread half over noodles.
  5. 5
    Cover with another layer of noodles, then potato mixture.
  6. 6
    Melt butter or margarine in fry pan, saute onion until clear and soft.
  7. 7
    Pour over noodles.
  8. 8
    Cover with foil.
  9. 9
    Bake 30 minutes in 350F oven.
  10. 10
    Let stand 10 minutes before cutting.
  11. 11
    Serve with sour cream.

This was not exactly my favorite, but not really bad either. I followed the advice of another poster and put some of the butter onto the bottom of the baking dish which made the bottom layer of noodles soft, not rubbery. I wasn't crazy about the two eggs in the potato mixture, so I think I'll cut back next time. Thanks for an otherwise good recipe!

    This was very good! Using a 9x13 glass dish, I only needed nine lasagna noodles which made two yummy layers. One cup butter was too much, IMO . . next time, I'll use 1/2 cup (one cube) butter. Also used 1 tsp. garlic salt and 1 tsp. onion powder . . will use fresh minced garlic next time. This is a keeper!

    A very good recipe..will make again. But prep time is decieving when you take into consideration: making the mashed potatoes, cooking the noodles etc.... Will definitey share the recipe with family!!!

    Very good. But we definitely didn't need 1 cup of butter.
