Quick and easy, very tasty meal. evolved to our tastes from Cooking Light.

SERVES 4 (change servings and units)

Ingredients

Directions

    Coat a large nonstick frypan with cooking spray, and place over high heat until hot.

    Add chicken, stir fry 3 minutes.
  3. 3
    Stir in chili powder and cumin.
  4. 4
    Remove chicken from frypan, set aside.
  5. 5
    Add oil to frypan, and heat over medium high heat.
  6. 6
    Add green pepper strips and onion, stir fry 3 minutes.
  7. 7
    Return chicken to frypan and stir in corn and salsa.
  8. 8
    Stir fry 2 minutes more or until thoroughly heated (Alternately, thinly sliced into strips, turkey, beef or pork may be used).

I was going to upload a picture only to realize, I ate all of this before capturing it on film. I decreased the chili powder to 3/4 tsp. and increased the cumin to 3/4 tsp. per personal preference. I used Full Circle Organic mild salsa (about 1 c. with extra on the side of each serving) I would definitely recommend this as a fajita dish filling but alone with crunchy tortillas made for a nice summer lunch! Thanks!

    Just like the description says - quick and easy! Easily adaptable for whichever spices you might like to add (I have a seasoning salt I just love which was great in this dish). I made this dish when I was somewhat in a pinch and did not have tortillas available, but I think they would be great with tortillas and will plan ahead next time. This is a keeper for a quick and easy dinner that will please the whole family.

    This recipe was very easy to make. Nice and spicy, which is how we like our food. Tastes wonderful!!!

    This recipe was easy to make. Spicy--which is how we like it. The taste is wonderful. We had it with steamed rice, which complemented this dish very nicely.
