Sugar-Free Italian Bounet (South Beach Diet)

Ingredients

• 3 eggs
• 2 egg yolks
• 1 1/4 cups heavy cream
• lemon zest
• 1 teaspoon vanilla
• 1 teaspoon almond extract
• 2 tablespoons rum or espresso or sugar-free amaretto syrup
• 1/4 cup sugar substitute
• 1 1/2 cups almond meal
• 1/4 cup unsweetened cocoa powder

Directions

   Preheat oven to 350 degrees.

   Butter a glass, metal pan, or pudding mold.

   Prepare a larger pan for a "Bain Marie".

   Mix cream, zest, and flaborings.

   Whisk eggs and yolks until light in color.

   Combine all ingredients.

   Pour into prepared loaf pan.

   Put larger pan in oven and add hot water.

   Optional: place a dish cloth in the middle to keep other pan from sliding. Place loaf pan inside.

    Bake for 30 minutes or until knife in center comes out clean, or nearly so. Open oven door and let cool slowly.
