Vegetable Tagine

Ingredients

• 2 (14 ounce) cans chickpeas
• 1 (14 ounce) can tomatoes, chopped
• 1 onion
• 2 tablespoons coconut oil
• 3 garlic cloves
• 1 teaspoon turmeric
• 1 teaspoon cayenne pepper
• 1/2 teaspoon cinnamon
• 1/2 teaspoon ground cumin
• fresh coriander
• fresh parsley

   Then when that tomato mixture has had 20 mins add the chickpeas and then simmer again for another 20 stirring occasionally stir in the herbs before you serve.
