Cajun Potato Salad

Ingredients

  • lbs small red potato
  • 1/2 cup chopped red onion
  • 1/2 cup sliced green onion
  • 1/4 cup minced fresh parsley
  • tablespoons cider vinegar, divided
  • 1/2 lb precooked smoked kielbasa or cajun sausage, sliced
  • 4-6 tablespoons olive oil
  • tablespoon Dijon mustard
  • 2 garlic clove, minced
  • 1/2 teaspoon pepper
  • 1/4-1/2 teaspoon cayenne pepper
  • Directions

    1. 1
      Cook the potatoes in boiling salted water for 20-30 minutes or until tender; drain.

      Rinse with cold water; cool completely.

      Cut into 1/4 inch slices; place in a large bowl.

      Add onions, parsley, and 3 tablespoons vinegar; toss.

      In a medium skillet, cook sausage in oil for 5-10 minutes or until it begins to brown.

      Remove with slotted spoon and add to potato mixture.

      To drippings in skillet, add mustard, garlic, pepper, cayenne and remaining vinegar; bring to a boil, whisking constantly.

      Pour over salad and toss gently.

      Serve immediately.

    This is one of my favorite summertime recipes! Every time I've made it people have gone absolutely crazy for it! Unlike the previous review, I will sometime add extra sausage to the salad, because who doesn't like extra in a dish like this? Also, I'm not a huge spicy food fan so sometimes when I make it I cut back on the amount of cayenne but that's just my personal preference. This salad is extremely easy, quite different from a typical potato salad and it makes a really great side dish for some boneless pork ribs. Thank you so much for posting it!

    I prepared this to serve alongside steaks and grilled shrimp. We enjoyed this potato salad very much. The only change I made was to use about half the amount of sausage as that was all I had. I honestly don't think this hurt the flavor of the salad. It had a wonderful flavor and I really enjoyed the subtle heat of the cayenne. Thanks for sharing the recipe!
