I received this recipe from a family friend. The combination of ingredients sound a little strange... but trust me... it's delicious! I serve this with Ritz crackers. (Prep time includes chilling time.)

SERVES 14 (change servings and units)

Ingredients

Directions

  1. 1
    Beat cream cheese until softened.
  2. 2
Stir in gently, crushed pineapple, bell pepper, green onion, lemon pepper, season salt and 1 cup pecans.
  3. 3
Roll on plastic wrap into a ball.
  4. 4
Wrap up the ball in plastic wrap and chill for 2-4 hours.
  5. 5
Once the ball is firm, roll in remaining 1 cup of chopped pecans.
  6. 6
    Serve with crackers.

This was a huge hit! My father-in-law was here for dinner, and we all really enjoyed it. The only problem I could see with it was that none of us knew when to stop eating it. My husband suggested and "A+++!!" Way to go!!!

I made this as part of our Christmas Eve nibbles, the added pineapple gives this cheese ball a nice sweet flavour. Makes heaps too, thanks for posting.

This recipe certainly lives up to it's name. The only things I did differently were to add 1/2 tsp of minced garlic and to roll the finished cheese ball in paprika and then the walnuts. It tasted fabulous and the pineapple added an extra something. This looked extremely decorative on the plate too. I'll definitely make this one again - thanks, Kim.
