Thai Chicken Fried Rice with Basil - Kao Pad Krapao

Another delicious way to enjoy fried rice, fragrant with the heady aroma of basil!

SERVES 2 -3 (change servings and units)

Ingredients

Directions

    In a wok or large skillet, stir-fry garlic in oil until golden; then add chilies and chicken and stir-fry until chicken is cooked.
  2. 2
    Add rice, sugar, fish sauce, and soy sauce, and stir-fry, mixing gently.
  3. 3
    When well mixed, add shallots, basil leaves and cilantro; cook another minute or so, and serve.
  4. 4
    If you desire, serve with lime wedges, chile sauce, fish sauce, or soy sauce at the table.

He loved it. I added about 3/4 cup each of appropriate types of veg (onion, red pepper, green beans), subbed red pepper flakes for hot chiles, and omitted shallots and cilantro. I love it I have everything I need on hand!

    This was so very good!! We very much enjoyed your "Chinese Fried Rice", and this is even better, wow! I stuck to the recipe apart from omitting the chicken, because I was serving a chicken dish as well, we just loved the incredibly rich fusion of flavours. I WISH I'd had some left over for my lunch, but no such luck!! I'll be making this often, thanks Sue!!

    This dish--known to me as 'Chili Chicken'--has always been a favorite of mine. I commonly ordered this (along with a side of spring rolls) at my favorite Thai restaurant...before we moved out to the 'burbs (where what serves as ethnic cuisine just does not measure up to my standards). Anyhoo, this recipe for Kao Pad Krapao is perfect, precise and delicious! I am shocked down to my toes at how good this dish. I find now, however, that it's fine with regular basil (as opposed to Holy Basil).

    Just made this amazing dish! Simple and delicious! The recipe is easily doubled. I added extra basil (1 cup total - love the taste and smell!) and some thinly sliced carrots for veggie content as well as color. Didn't have any cilantro or Thai red chili peppers but I substituted with red pepper flakes and came out wonderfully! Thanks Sue L. :oD
