I came up with this recipe after eating Banana Bread Oatmeal. I was out of bananas, and was really wanting a warm, comforting bowl of oatmeal that could be made quickly. I already had a can of lite no sugar added apple pie filling that had been opened, so I thought I'd give it a try. If you want it to be a sweet as pie, you might want to add some brown sugar instead of or in addition to the sweetener. Feel free to add raisins if you like them (I don't) and to add to or take away from the spices.

SERVES 1 , 1 bowl (change servings and units)

Ingredients

Directions

  1. 1
Place pie filling in a microwave safe bowl. Dice into smaller pieces, if desired.
  2. 2
Add remaining ingredients to pie filling; mix well.
  3. 3
Microwave on high 1-2 minutes, stirring every 30 seconds.

Absolutely fantastic oatmeal! I didn't have pumpkin pie spice, so I made my own using a mixture of cinnamon, allspice, nutmeg and ginger. I didn't have ground cloves either, so I just left it out... I don't think I like them anyway! I did use the salt, and water instead of the skim milk. I used a packet of Quaker Organic instant oatmeal. The only thing I'd do differently next time is chop up the apple more finely than I did. Thanks for posting!!
