Yummy tropical cocktail. I used some freshly squeezed mandarin orange juice and light coconut cream to cut the fat. For the best taste though, I'd definitely stick with Coco Lopez for the cream of coconut (unfortunately that's not an option here in Oz, as we don't have it here), but it's yummy the healthier way too.
