Healthy Avocado Salad Dressing

A healthy alternative to oil-based salad dressing that goes well with lettuce and tomato. It can also be used as a sandwich spread in place of mayo or as a dip for veggies.

1 1/4 cup (change servings and units)

Directions

    Chop avocado and place in a blender.

    Add water, lime peel, lime juice, cumin, salt and pepper, green onion, and garlic.

    Blend away until smooth.

    Adjust seasoning.

This is a pretty good base. I also followed the advice of others and added about a Tbsp of light sour cream and some ground red pepper with the cumin. I served this over a taco salad and the leftovers were scooped up with cucumber spears. Tasty!

    This was wonderful. After reading the previous comments I add 2 rounded tablespoons light sour cream along with the water. I also added some cayenne pepper, cumin and chili powder (eyeballed). I forgot the garlic but I don't think it mattered. Served with a tomato, cucumber, lettuce salad. Thanks for posting Izzy.

    This is pretty good, though I also added about a half-tsp of chili powder and a dash of red pepper. I like using water to blend it, but I think next time I'd add even just 1 TBSP of light sour cream to perhaps give it a bit of creaminess. I served this over just plain iceberg as a side to tacos recently. Thanks!

    This was great especially for those on low low cal eating. Right around 150 for the dressing which is low considering avacado is hi in cals and commercial dressings are about 120 cal or more per TB. I ADDED 2 ts of soymilk pwder to the water for creameier which addes about 20 cals
