Lemon Rice w/ Peas & Green Onions

    Combine 1 3/4 cups water, rice, and salt in large saucepan.

    Cook until just cooked-- do not overcook.

    Fluff with fork.
  4. 4
    Cool.
  5. 5
    Cook peas in medium saucepan of boiling salted water 1 minute.
  6. 6
    Drain.
  7. 7
    Rinse under cold water.

    Drain.

    Heat oil in large nonstick skillet over medium-high heat.

    Add all but 2 tablespoons green onions; sauté 30 seconds.

    Add rice and sauté until heated through, stirring to break pieces, about 4 minutes.

    Add peas, lemon juice, parsley, and lemon peel.

    Sauté 2 minutes to blend flavors.
  14. 14
    Garnish with remaining green onions and serve immediately.

    Did not like this one too much. I was hoping this would be a way for the kids and I to eat peas since we all love rice and onions and lemon...however this just didn't work for us. It wasn't awful...just wasn't great. Still glad I tried it!

    This made it into 2Bleu's Best of 2007 Reviewed Recipes Cookbook. This was wonderful!!! OMG! I will definitely be keeping this one around for a loooong time. Thanks Sue!
