This recipe is very good and very easy. The texture is a bit different than traditional macaroni and cheese - denser and not as creamy - but delicious. I changed ingredients by using a mixture of swiss and cheddar (heavy on the swiss!) and adding about 1/4 C. chopped onions and a tbsp of mustard. It has the richness and flavor of cheese fondue.
