Top this with a scoop of vanilla ice-cream and you've got a very elegant dessert. They won't know how incredibly simple it is!!

    Place pineapple slices on broiler pan.

    Mix sugar, butter and cinnamon.

    Spoon onto pineapple.

    Broil, 4 inch from heat, for 4-5 minutes, until bubbly.

Great, quick recipe made with items I had on hand. My modifications resulted in a calorie content of about 270 per serving. I used 1T of butter and 1T packed brown sugar per pineapple ring. I spooned some of the sauce on top of the rings on a plate, topped with about 1/3 cup vanilla bean ice cream each, then topped with the remainder of the sauce, which hardened to a caremelized crunch on top of the ice cream. This would be really tasty with thinly sliced apples perhaps sauteed in a pan first, or pears or peaches.

    This was a nice little end to dinner. Quick and easy. I used canned pineapple slices this time, to save time, but I think it would be better with fresh pineapple. I agree with making more topping, it was really good. I sprinkled additional cinnamon on after broiling. I do wish I had some ice cream, that will be great to add next time. Thanks!
