This is our version of a wonderful (and very hot) chutney that is sold along the Mexican border of the USA. It will give your mouth a funky little roller coaster ride of hot/sweet even after you've swallowed! Serve with cream cheese on crackers, or just eat them from the jar. Great for gift baskets! Remove the seeds from the jalepenos for 'Cowgirl Candy'.

SERVES 16 , 1 cup (change servings and units)

Directions

    Place all ingredients into a small saucepan and cook over medium heat until boiling.

    Reduce temperature to low and simmer 20-25 minutes, stirring occasionally until liquid is reduced by about half.

    Let cool, stirring occasionally (it will thicken more as it cools) You can serve it warm or transfer to a jar and store in refrigerator. Serve with crackers spread with cream cheese and candy.

I made the Cowgirl Candy version, and my guests said to try at least the 1/2 cowgirl / 1/2 cowboy version since as delicious as it is, it can use more heat! We may ultimately go full cowboy on this one! I served this over a brick of cream cheese with my DH's favorite Wheat Thins crackers. We'll be making this again since it was such a BIG HIT! Thanks, 2Bleu! Made for PRMR Tag.

    Sorry 2Bleu, but this just didn't turn out for me. I followed the directions perfectly, but mine just didn't set up. I don't know what went wrong. Made for PRMR Tag.
