Ham and Bean Soup

Ingredients

• 8 ounces cubed ham
• 1/4 cup finely diced celery
• 1 cup water
• 1 cup low sodium chicken broth
• 15 ounces black soybeans (recipe called for Eden brand)
• 1/4 cup tiny diced carrot
• 2 teaspoons onions, minced
• 1/4 teaspoon minced garlic (optional)
• 1/8 teaspoon cayenne pepper
• 1/4 teaspoon cumin
• 1/4 teaspoon salt

Directions

   In a medium sauce pan brown the ham.

   Add 1 cup of water and scrape glaze off bottom of pan.

   Add low-sodium chicken broth.

   Drain the water from the can of beans. Add beans to the sauce pan.

   Add all other ingredients. Stir.

   Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors — the longer, the better (3+ hours being best.).
