Made this in conjunction with Puerto Rican Arroz Con Pollo (Rice and Chicken). This marinade smelled so lovely and fresh when I mixed it up. I did use the Mexican oregano, since I found it at the farmer's market. I liked the combination of the parsley and oregano. My BF thought the oregano taste was overwhelming to his taste buds... but ate all his chicken none the less! I think I may try marinating chicken quarters and then grilling one day. Thanks for posting!!!
