This is a very easy to make and a favorite in the summer when the zucchini is fresh out of the garden.

2 loaves (change servings and units)

Directions

    Mix together in a large bowl by hand: eggs, sugar, oil, vanilla, zucchini and nuts.

    Add: flour, baking powder, baking soda, cinnamon and salt.

    Put loaf pans.

    Bakt at 350 for 55 minutes.
