The Best Strawberry Muffins

Seriously, the best muffins i have ever tasted. I could eat every single one.

SERVES 12 (change servings and units)

    Preheat oven to 425, then grease your muffin tin.
  2. 2
    Sift flour, baking powder and salt into large bowl. Stir in rolled oats and sugar, then set aside.
  3. 3
    Combine milk, butter, eggand vanilla in a small bowl. Stir milk mixture into dry ingredients until moistened. Then stir in strawberries.

    Spoon batter into muffin tin, filling each intil 2/3 full.
  5. 5
    Bake 15 to 18 minutes or until lightly browned and toothpick insterted into center comes out clean.

The season for strawberries is long here in Southern California, but I knew I was pushing it when I bought strawberries for this recipe & I was right, they didn't have a lot of flavor, & taking that into consideration, these muffins were still very good, & with the added flavor of homemade strawberry preserves, well . . . ! I made a 2nd batch using fresh blueberries & those were SO FLAVORFUL, so I'm sure, with some IN-SEASON strawberries, these will be outstanding! Am happily keeping this recipe around so's I can make then next year when fresh strawberries abound! Thanks for posting the recipe! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]
