Carrot Zucchini Muffins

Very easy to make and super yummy. No oil makes it a very healthy muffin.

SERVES 12 , 12 muffins (change servings and units)

Ingredients

Directions

    beat egg in large bowl.
  2. 2
    add orange juice,applesauce and sugar, beat well.
  3. 3
    sift together dry ingredients.
  4. 4
    stir into egg mixture, mix until moist.
  5. 5
    gently fold in shredded carrots, zuchinni and raisins.
  6. 6
    spoon into well greased muffin pans about 2/3 full.
  7. 7
    bake for 20 minutes at 400 degrees.

Healthy indeed! I healthied these even more with a few changes. I used 1 tsp of Stevia powder in place of the sugar, and used unsweetened natural applesauce. Instead of white flour, I used "white whole wheat" flour, and I substituted 2 egg whites per one whole egg. I doubled this recipe and made 12 muffins and 3 small loaves of bread. These were a big hit at my yoga class, thanks!

    Great muffins...I am so glad I spelled Zucchini wrong!!! They are fat and guilt free and very yummy! No messy oil to deal with!
