Healthy indeed! I healthied these even more with a few changes. I used 1 tsp of Stevia powder in place of the sugar, and used unsweetened natural applesauce. Instead of white flour, I used "white whole wheat" flour, and I substituted 2 egg whites per one whole egg. I doubled this recipe and made 12 muffins and 3 small loaves of bread. These were a big hit at my yoga class, thanks!

Great muffins...I am so glad I spelled Zucchini wrong!!! They are fat and guilt free and very yummy! No messy oil to deal with!
