Amorous Poached Egg Sandwich With Swiss Cheese Sauce

Entered for safe-keeping, this would qualify as romantic breakfast food for DH. Prosciutto and spinach make this very special. Combined onion is 1/2 cup or 1 small onion. By Tracey Seaman, found in Every Day with Rachel Ray.

SERVES 2 , 2 sandwiches (change servings and units)

    In a small saucepan, melt 1 tablespoon butter over medium heat.
  2. 2
    Add 1 tablespoon onion and cook, stirring, until softened, about 3 minutes.

    Whisk in the flour and stir for 1 minute.
  4. 4
    Whisk in the milk and simmer for 2 minutes, then whisk in the cheese and season to taste with salt and pepper. Cover the cheese sauce and set aside.

    Melt the remaining 1 tablespoon butter in a medium skillet over medium heat.

    Add the remaining onion and cook, stirring, until golden, about 7 minutes.

    Add the spinach and cook until soft, 3 to 4 minutes.

    Season to taste with salt and pepper.

This was a great breakfast for me. This is only my second attempt at poaching eggs and they turned out great and the combination of the spinach and swiss sauce on the english muffin were wonderful. I was a little unclear on the directions though. I wasn't sure if the prosciutto and tomatoe were to be placed on the muffin or eaten along with it on the side. I also had to look back at another recipe to remember how to poach my eggs since this was only my second time and there are no directions for poaching the eggs here. I toasted my muffin and placed the poached egg on top, then I covered it with the spinach then the swiss chesse sauce. I did eat the prociutto and tomatoe on the side. Thanks for sharing.
